Jäckering Research was founded in 2014 as an independent research facility dedicated to innovative fermentation processes utilizing wheat processing by-products. Today, we develop sustainable process solutions for the food and biotechnology sectors based on a wide range of raw materials.

Our state-of-the-art, fully automated fermentation platform enables the development and optimization of tailored biotechnological processes. We support projects throughout the entire scale-up journey—from substrate pretreatment of diverse raw materials to operations in shake flasks, laboratory fermenters (10 L), and pilot or technical-scale facilities with volumes of up to 1.5 m³ (aerobic) and 20 m³ (anaerobic). Sterile fermentations featuring customizable process control—spanning batch, fed-batch, and continuous modes—ensure flexible and practical process development.
Our technical infrastructure includes modern processes for downstream processing and product recovery. Decanter centrifuges, such as the Sedicanter® and Tricanter®, are used for solid-liquid separation. Dissolved substances are fractionated and concentrated via ultrafiltration and nanofiltration. Additionally, vacuum evaporators with capacities of up to 90 kg/h are available for recovering volatile components and efficiently concentrating process streams. This enables us to develop and optimize processes comprehensively, ranging from laboratory to pilot scale.
Robust analytical capabilities form the foundation for successful process and product development. Our analytical laboratory offers a wide range of modern testing methods, including HPLC analysis for carbohydrates, fatty acids, carotenoids, and amino acids; molecular weight determination via GPC; rheometry; ELISA techniques; Dumas nitrogen determination; and Soxhlet extraction. This portfolio is complemented by UV-Vis spectrophotometry, comprehensive standard laboratory analysis, and customer-specific analytical procedures tailored to individual client requirements.
Our biological expertise is based on a continuously growing strain collection of selected yeasts, fungi, and bacteria, which we systematically build and expand to meet our customers' requirements. In addition, we carry out the task-specific selection and isolation of suitable microorganisms and optimize their properties using classical mutagenesis. This enables us to establish the foundation for high-performance, cost-effective fermentation processes.

The research work is particularly focused on the development, production, and refinement of wheat products, wheat starch, and by-products of wheat starch production. The work includes physicochemical, biochemical, and mechanical modification of raw materials. Equally, the focus is on further development of production units that serve the processing of wheat and its subsequent products.
